雙糖又稱為二糖,是由兩個單糖分子組成的糖類化合物。常見的有蔗糖、乳糖和麥芽糖。
值得注意的是,游離的麥芽糖和纖維二糖并不天然存在于自然界中。前者為淀粉的部分水解產物,后者是纖維素的部分水解產物。
蔗糖、乳糖和麥芽糖都是優質的食品原料,也用作工業用途。在醫藥領域,蔗糖常用于生產右旋糖酐;而乳糖則可用作片劑或散劑的賦形劑或稀釋劑。
雙糖大致分為兩類:有還原性的麥芽糖型雙糖(如麥芽糖和乳糖)以及無還原性的海藻糖型雙糖。其中,麥芽糖是淀粉的水解產物,由兩個葡萄糖分子組成;乳糖特異地存在于人和動物乳汁中,由一分子葡萄糖和半乳糖構成。
在消化道中,存在一些特定酶類可分解這些雙糖,例如麥芽糖酶、乳糖酶和蔗糖酶。
